Pumpkin Spice Overnight Oatmeal Recipe

It’s official – pumpkin spice season has arrived!  This much anticipated favorite fall flavor seems to be everywhere these days, from coffee shops to grocery store shelves, so we thought we’d bring a little spice to our overnight oats as well.

You can make our pumpkin spice overnight oatmeal with whey protein or a vegan protein powder if you are dairy free. Either way it’s a tasty treat that you can look forward to for breakfast or a post workout snack and most importantly, it’s protein packed!

Ingredients (serves 1):

  • 1/2 cup rolled oats
  • 1/2 cup unsweetened almond milk
  • 1/4 cup pumpkin puree
  • 1/4 cup plain Greek yogurt (we used 2%)
  • 1/2 tsp pumpkin pie spice (try making your own by combining 3Tbsp cinnamon, 2 tsp ground ginger, 2 tsp nutmeg, 1.5tsp all spice and 1.5tsp cloves)
  • 1 tsp stevia
  • 1/2 scoop of Iso Smooth Vanilla Protein Powder

Directions:

  • Mix all ingredients in a mason jar or bowl, leaving to sit overnight.
  • Top with a dollop of Greek yogurt and a few walnuts in the morning and enjoy!
